I am searching on line and in books and finding contradicting information. I have read that garlic (fresh), fresh juiced carrots (not store purchased juic), grape seed extract, olive leaf extract and something called pau d’arco help eliminate and then I have to take probiotics not to mention a "candida diet"- can’t find consistent info on what a good candida diet would even be…. help!

The only sure fire way to resolve a candida albicans overgrowth is to starve it to death…….. to eliminate all sugar and yeast from your diet…… yes that’s hard because you generally need to eliminate all fruit sugars as well (as i had to) …….. but it works………. it would be a really good idea to empower yourself with knowledge in regards to the nature of an overgrowth of candida albicans……….. basically it hinges on managing to completely eliminate sugar and yeast ….. candida will thrive and flourish on both……. so yeah …….. sauces, juices, spreads, packaged foods, packaged anything, bottled anything ….. and that includes supplements, tablets, cough mixtures …. every single thing you put in your mouth is a possible culprit for containing sugar ……. opening a bottle or packet or tin is pretty much out unless it specifically states "no sugar at all"…….. and that’s not going to happen unfortunately……. fresh food that you prepare yourself so that you know precisely whats in it is the way to beat it mate.
Read a book called "Complete Candida Yeast Guidebook" ~ Revised 2nd Edition by jeanne Marie Martin with Zoltan P.Rona, M.D… fabulous reading there for you.
A few suggestions for natural antifungals are ~
Oil of Oregano ~ antiviral, antifungal, antibacterial and antiparasitic ….. it has strong antioxidant and antiflammatory effects and is quite effective in eliminating Candida ……. not regular oregano but a wild form (wild mountain oregano, Origanum vulgare species) ….. your local health food store may be able to help you with this one… Oil of Oregano has no side effects and oregano is compatible with any other natural remedy or prescription drug……. the active compounds in Oil of Oregano also act as free radical scavengers thus prevent further tissue damage while encouraging healing.
Grapefruit Seed Extract ~ Go to your local health food store and ask the resident naturopath his/her advice on Grapefruit seed extract.. they don’t usually charge for off the cuff advice and are more than willing to share their knowledge ….. Grapefruit seed extract is a multipurpose (broad spectrum) compound that is currently being used in humans and animals alike to safely fight many types of internal and external infections caused from parasites (single and multi-celled), viruses, bacteria and fungi.
Grapefruit seed extracts biggest benefit is due to it’s multipurpose (broad spectrum) effect. It is effective even if the causes of the infections are known, unknown or misdiagnosed. By eliminating a wide range of dangerous pathogens grapefruit seed extract actually enhances the immune system.
Freshly crushed cloves of garlic mixed throughout your green vegies and lentils or brown rice, beans, salads etc……. will also help enormously in eradicating parasites and fungus overgrowth….. garlic arre a powerfull natural antibiotic, antiparasitic, antifungal, antibacterial…… please be carefull with garlic though as starting any new food you need to be aware of how your body responds to it… it may cause gastric distress if you have more than 1 clove to begin with and as well as that …… you may be intolerant to garlic…… tummy aches, brain frizz, achy bones, moodiness and irritability can all be definite symptoms that your body can’t tolerate it ….. i found that out the hard way.
Ask at the health food store about other natural antifungals such as Colloidal Silver, Powerded Vitamin C with bioflavonoids, Olive leaf extract too………. ;0)
And, of course, complete and total avoidance of any food or drink that contains yeast or sugar ……… fanatical label reading or simply don’t eat from a package and prepare loads and loads of fresh green vegies (all spectacularly rich in calcium and magnesium and far easier to digest than all that milk and dairy which are btw loaded with processed sugar anyway), some organic rices, organic rolled oats, beans, organic lentils, organic quinoa some lean meats, organic nuts and seeds yourself ….. broccolli and celery and lemons freshly juiced is what totally saved my sanity…… around a litre each day…… filled me up….. supplied me with much needed calcium and stress busting magnesium (the green vegies) and bolstered my liver functioning with fresh lemon juice …. and drinking plenty of fresh filtered water …. hydrating yourself properly ….. some people find success by also eliminating natural sugars such as fruits and raw honey…… that’s the final route i had to go ….. eliminating all fruit sugars … even the low sugar ones like pears and strawberries ….. and raw honey for around 4 months…..;0)
life is all about choices i guess……… and i’m so glad i made the choice to ditch sugar and yeast …… you can do it mate….. i know you can……… get your bounce back…. you’re entitled you know.
good luck

Low carb diets help to "starve out" candida. Simply by keeping your blood sugar low much of the candida will die due to lack of high glucose in the blood stream. That is how low carb helps.
Probiotics such as acidopholus from yogurt also help to crowd out the candida. If healty bacteria like acidopholus is low in your body the yeast can get out of control kind of like how deer populations become too high without natural predators to keep them contained.
Eating fresh lemons also helps to control candida. Drinking (sugar free) lemonade will help. Same with apple cider vinegar.
Pau d" arco is simply a part of a tree bark. It does help to kill yeast, but is expensive. There are cheaper ways to help. The olive oil, grape seed extract, olive leaf all help by reducing carb intake which therefore starves out the yeast.
It all boils down to starving out the yeast or crowding it out with healthy bacteria. Yeast love sugar. If you drink sweet drinks, eat high starches and carbs, you will have more yeast than if you eat lower glycemic choices.

This may sound unorthodox, but it really works.
Wasabi. Just ad a dollop of the real stuff (not dyed horseradish like you find at cheap Japanese restaurants) to any of your food.
Also, many general spices have been shown to have antimicrobial properties: Ginger, curry (mixture of spices), and turmeric are common herbal treatments.
The comment regarding less carbohydrate is also somewhat accurate. Try adding stevia to your tea/coffee instead of sugar, and avoid sugary snacks.

As you will have to eliminate bread from your diet I think you will find that rice is OK and just about the only carb you can have. There are alternative "milks" such as almond and soya (but avoid the sweetened soya) and you can get soya yogurt. it isn’t the same as proper yogurt but you can get used to it. Good luck. Its hard work but worth it.

I love the answer by Allheart – some great information there and it is a great foundation for a long term plan to beat candida and keep it at bay. I will also add here the Candida information that works for a great many people from my Home & Herbal Remedies section of my website
(http://www.tbyil.com/remedies.htm):
Candida
Candida is a genus of yeasts. Many species of this genus are endosymbionts of animal hosts including humans. While usually living as commensals, some Candida species have the potential to cause disease. Clinically, the most significant member of the genus is Candida albicans, which can cause infections (called candidiasis or thrush) in humans and other animals, especially in immunocompromised patients. Many Candida species are members of gut flora in animals, including C. albicans in mammalian hosts, whereas others live as endosymbionts in insect hosts. If you want to get rid of candida and get it off the intestinal walls, it is really quite simple:
Superior colloidal silver (such as that made by Utopia Silver or Purest Colloids) will get rid of candida in short order. Be sure to take plenty (a couple of ounces or more per day) and it will only take a few days.
Bentonite clay will literally pull the candida off the intestinal walls
Coconut oil – is very effective against candida and is a wonderful addition to any healthy diet plan
After you get rid of candida, make a couple of tablespoons of coconut oil part of your daily diet/health plan, supplement with probiotics to make sure that beneficial flora flourishes in the gut, and occasionally take some colloidal silver (only a couple of teaspoons two or three times a week should be plenty) and the bentonite clay and your candida problems should be gone forever.
